Micro Recipes

Postby tonja » Thu Jun 22, 2006 6:40 am

Here's some that I came across & thought would share, you could use for parties!

Dump Cake in Large Deep Rock n Serve
16 oz can crushed pineapple
21 oz. can cherry pie filling
1 package yellow pie filling
1 stick butter
1box cake mix
Put can of pineapple in bottom of Rock N Serve large deep container. Use your Silicone Spatula to spoon out can of pie filling on top of pineapple. Put cake mix on top of pie filling and level out. Melt butter in microwave (1 min. on 50% power) in small Rock N Serve. Drizzle butter over cake mix, making sure all cake mix is covered. Cook covered in microwave for 12 minutes on high. If you don't like pineapple and/or cherry you can use any two pie filling that you want.
Example: instead of the pineapple and cherry, use two apple and peach, blueberry works really well too, etc. You can also use any cake mix, chocolate, white or yellow. Serve it warm, with a scoop of ice cream using your Ice Cream Scoop.

EARTHQUAKE CAKE on Large Deep Rock n Serve
½ C chopped pecans German chocolate cake mix 1/3 C water ¼ C vegetable oil
3 eggs ½ C shredded coconut 1 8oz. Pkg. cream cheese ½ t. vanilla
¼ C margarine 8 oz. Powdered sugar

Mix pecans and coconut and spread in bottom of LARGE DEEP ROCK ‘N SERVE. Mix cake mix, water, oil, and eggs. Pour cake mix over coconut and pecans. Soften cream cheese and margarine. Mix with vanilla and powdered sugar and spoon over cake batter. Microwave at 70% power 10-15 minutes. Cake will “erupt” and have craters. Let sit covered for 5 minutes. Serve topped with ice cream if desired.

Large shallow RNS Dump Cake

1 can Pie Filling
2 tbs butter
1 box jiffy yellow cake mix

Pour pie filling in RNS Large Shallow.
Sprinkle cake mix on top to cover.
Dot with butter evenly.
Microwave 7-11 minutes on high without cover.
Let cool & serve with ice cream.
Orange/Pineapple Delight.

1 yellow cake mix w/no pudding in the mix
1 can mandarin oranges w/juice
4 eggs

Mix AND bake in Microwave Stack Cooker w/Cone 10-12 mins on High.

Frosting/topping:
1 small box vanilla instant pudding
1 -16 oz can crushed pineapple
1 -8oz tub cool whip

Mix pudding/pineapple, fold in whipped topping. Refrigerate 20 mins. Frost cooled cake.

Have some more that I will add later for assorted items, not just sweets

Tropical Fruit Shortcake
Serves 6-8

1 pkg. (9 oz.) single layer cake mix (prepared per package directions)
1 can (15 oz.) tropical fruit cocktail, drained, reserving juice
1 tsp. cornstarch
Whipped topping
Optional: approximately 1/3 cup toasted coconut

1. Spray Heat 'N Serve™ 6 ¼-cup Round Container with cooking spray. Pour batter into container and place in microwave uncovered. Microwave on High for 5-7 minutes (depending on microwave power), rotating container during baking. Cake should pull away from sides slightly and be slightly sticky on top. Toothpick should test clean when inserted into center of cake. If necessary, microwave an additional minute and check; repeat until done.
2. Cool 4-5 minutes and invert onto serving plate.
3. Place reserved juice in 2-cup Micro Pitcher. Blend corn starch into reserved juice and heat in microwave on High for 2 minutes or until slightly thickened; add to reserved fruit.
4. Split cake into 2 layers; spread half of fruit mixture over bottom layer, top with (optional) toasted coconut and pipe whipped topping around edge of cake with Decorating Bag's star tip 6.
5. Place top layer on bottom layer; pour remaining fruit on top of cake. Garnish with additional whipped topping and remaining toasted coconut, if desired.

Cherry Chocolate Fudge

(makes about 3 dozen pieces)

1/2 cup butter, cut into pieces
3 1/2 cups powdered sugar
1/2 cup unsweetened cocoa powder
1/3 cup evaporated milk
1/2 cup finely chopped Maraschino Cherries, well drained)
1/3 cup pecan pieces
1 tsp. vanilla or almond extract

Line a 8" square pan with foil. Drain chopped cherries. Microwave butter on high in Base of Oval Microwave Cooker for 45 seconds or until melted.
(I have also used the large round Heat 'N Serve Container to melt the butter and it worked out just fine). Stir in powdered sugar, cocoa and evaporated milk. Microwave on high for 1 minute, stir with whisk. Microwave on high an additional 30 seconds at a time until slightly thickened and smooth when stirred. Do not boil. With the Tupperware (tm) Silicone Spatula, stir in the cherries, pecans and extract. Spread into the prepared pan. Cover and refrigerate until firm.
