Orange Coffee Cake Rolls
1 pkg, yeast
1/4 c. warm water
1 c. sugar
1 tsp salt
1/2 c. sour cream
1/2 c. butter
2 3/4 c. flour
1 c. coconut, toasted
2 tbsp. grated orange rind
2 eggs
confectioners sugar
Dissolve yeast in warm water. Combine 1/4 c. sugar, salt, eggs, sour cream and 6 tbsp. butter, then add yeast. Gradually add flour to form a stiff dough. Let rise until doubled in size. Combine 3/4 c. sugar, coconut and orange rind. Knead dough about 20 times, roll half of dough into a 12" circle. Brush with 1 tbsp butter and sprinkle with 1/2 of coconut mixture. Cut into 12 wedges and roll, starting at wide edge. Place rolls, point side down in 3 rows in a greased baking pan. Do the same with the rest of the dough. Let rise until light. Bake at 350 degrees for 15-20 minutes. When cool sprinkle with confectioners sugar.
