Potato Casserole

2 lbs of shredded frozen, hash browns, thawed
1/4 cup of shortening
1 tsp of salt
1/4 tsp of pepper
2 tbsp of diced onions
1 can of cream of chicken soup
1 pt of sour cream
2 cup of shredded cheddar cheese

Combine all ingredients- omitting the cheddar cheese into a large 9 x 13 " baking pan. Bake at 350 degrees for 35-45 minutes.Add the shredded cheddar cheese on top and bake for 10 minutes more or until cheese is melted.
