Tapioca 'N Peach Pudding
1 egg, lightly beaten
1/3 c. sugar
3 tbsp. quick cooking tapioca
1/8 tsp. salt
2 3/4 c. milk
3/4 tsp. vanilla extract
1 c. sliced canned or fresh peaches
In a saucepan, combine egg, sugar, tapioca, salt and milk. Let stand for 5 minutes. Cook over medium heat, stirring constantly. Bring to a full boil and cook for 6-8 minutes. Remove from heat, add vanilla and cook for another 5 minutes. Remove from heat and Fold in peaches and chill. Makes 4 servings.
