Zucchini Muffins
1 ½ cups of all-purpose flour
1 cup of shredded zucchini
1 cup of sugar
2 medium eggs
½ cup of vegetable oil
½ cup of chopped walnuts
1 teaspoon of baking soda
½ teaspoon of salt
¼ teaspoon of baking powder
Preheat oven to 375 degrees.
Mix together the vegetable oil, sugar and eggs. Add the shredded zucchini, flour, baking powder, baking soda and salt. Mix. Fold in the chopped walnuts.
Lightly grease muffin tips, then fill two-thirds full with the mixture.
Bake for 25 minutes.
