Ginger Cookies
¼ cup sweet butter, melted and cooled
2 tablespoons molasses
½ cup unrefined dark brown sugar
1 egg
1 cup all purpose flour
1 teaspoons baking soda
1 teaspoon ground ginger
¼ ground allspice
Mix the butter, molasses, brown sugar and egg in a large bowl. Mix together the dry ingredients and then add them to the butter mixture and mix.
For dough into balls about 2 inches in diameter. Place balls on cookie sheet and press down to create 1 ¼ inch rounds. Place baking sheet in refrigerator for about an hour before baking. When ready to bake, preheat oven to 350 degrees. Sprinkle cookies with granulated sugar and bake for 10-12 minutes. Cool on wire rack.
