1/2 cup of packed brown sugar
1/3rd cup of chopped pecans
3 tbsp of butter
1 unbaked (9 inch) pie shell
1 cup of evaporated milk
1/2 cup of water
1.5 cups of canned pumpkin
3 eggs, slightly beaten
1/2 cup of granulated sugar
1/2 cup of packed brown sugar
1 & 1/2 tsp of pumpkin pie spice
1 tsp of salt
1/2 cup of heavy whipping cream, whipped
Combine the 1/3rd cup of brown sugar, the pecans and butter in a bowl and mix well. Pour into pie shell. Bake at 400 degrees for 10 minutes. Remove from the oven and reduce heat to 350 degrees.
Scald the evaporated milk and water in a sauce pan over medium heat. Remove from heat. Combine the pumpkin, eggs,granulated sugar,1/2 cup of brown sugar, pumpkin pie spice and salt into a large bowl and mix well. Beat in the scalded milk mixture. Pour into the prepared pie shell. Bake for 50 minutes. Cool and top with whipped cream.
