4 cups of Chicken broth
1 cup of chopped onion
1 cup of shredded carrot
1 (16 oz) bag of frozen brocoli-cauliflower mix
3 cups of diced potatoes
3 cups of chopped cooked chicken
1 (16 oz) package of processed cheese, cubed
2 (10 oz) cans of creamed chicken soup
Combine the chicken broth, onion and carrots in a 4- qt stockpot. Simmer over medium heat for 10 minutes. Add the brocoli- cauliflower mix, and potatoes. Simmer for 15 minutes of until tender Add the chicken, cheese and cream of chicken soup. Cook over low heat until the cheese melts, stirring constantly. Ladle into soup bowls.
