1 lb of whole small new potatoes
1/4 cup of plain non fat yogurt
6 tbsp of light sour cream
1/4 cup of finely chopped green onion
1/4 cup (1 oz) grated Parmesan cheese
2 tsp of chopped fresh dill or 1/4 tsp of dried dill weed
Pepper to taste
Scrub the potatoes well and pierce with a fork. Arrange in a microwave safe dish and microwave on high just until the potatoes are tender. Cut the potatoes into halves and scoop out the centers, reserving the pulp for another use. Combine the yogurt, sour cream, green onions, cheese, dill weed and pepper in a bowl and mix well. Spoon into the potato shells and arrange on a serving plate. Garnish with lemon slices and fresh dill.
