Roast Fillet of Beef

1 (5-lb) fillet of beef
4 garlic cloves, sliced
1 tsp of pepper
1/2 tsp of hot red pepper sauce
1 cup of soy sauce
1/2 cup of vegetable oil
1 cup of red wine vinegar
1 tsp of thyme
1 bay leaf
3 slices of bacon

Make 1" slits in the roast and insert the garlic cloves. Rub the roast with pepper and hot sauce. Combine the soy sauce, oil, vinegar,thyme and bay leaf in a sealable plastic bag. Add the roast. Seal and place in a shallow dish. Marinate at room temperature for 15 minutes or in the refrigerator for several hours.
Drain the roast, reserving the marinade. Place on a rack in a roasting pan. Arrange the bacon over the top and insert a meat thermometer. Bake at 425 degrees for 45 minutes, or bake at 125 degrees on a meat thermometer for rare, or to 145 degrees for medium. Basting occasionally with the marinade. Place on a serving plate and slice thinly.
