Chocolate Orange Mousse
1 c. evaporated milk
4 oz. Sweet Baking Chocolate
1 env. unflavored gelatin
2/3 c. water
2 eggs, separated
1/2 tsp. grated orange rind
1/2 tsp vanilla
1/3 c. sugar
Combine evap. milk and chocolate in a saucepan. Place over low heat, stirring constantly until chocolate is melted. Combine gelatin and water in a small bowl, let stand to soften gelatin, about 5 mins. Add to chocolate mixture in saucepan, stir until gelatin is dissolved. Cool for 5 mins. Beat in egg yolks, 1 at a time. Stir in orange rind and vanilla. Chill until mixture mounds when dropped from a spoon. Beat egg whites until foamy, gradually add sugar, 2 tbsp. at a time, beating until meringue is stiff but not dry. Fold meringue into chocolate mixture. Spoon into dessert dishes and chill for 2 hours.
