Apple Walnut Muffins

2 cups of all purpose flour
2 tsp of ground cinnamon
1 tsp of baking soda
2 eggs
1 cup of vegetable oil
1/2 cup of granulated sugar
1/2 cup of light brown sugar
1 tsp of vanilla
4 cups of tart chopped apples
3/4 cup of buterscotch chips
1 cup of chopped walnuts

Mix the flour, cinnamon, and baking soda together in a bowl. Beat the eggs in a large mixing bowl. Add the oil,sugar, brown sugar,vanilla and apples and mix well. Add the dry ingredients and mix until just moistened. Stir in the butterscotch chips and walnuts. Spoon into greased muffin cups. Bake at 350 degrees for 15-20 minutes or until muffins test done. Remove to a wire rack to cool.
Makes 1 dozen.
