1 tbsp of vegetable oil
1 tbsp of lime juice
1.5 tbsp of minced fresh cilantro
1/4 tsp of cumin
1 garlic clove, finely chopped
1 yellow bell pepper, thinly sliced
1 green bell pepper, thinly sliced
1 small purple onion, thinly sliced
1 & 1/2 lbs of shrimp, peeled and deveined
8 flour tortillas, warmed

Guacamole
Whisk the vegetable oil, lime juice, cilantro,cumin and garlic in a bowl. Add the bell peppers, onion and shrimp and toss gently to coat. Chill, covered for 30 minutes. Drain the shrimp, discarding the marinade. Place the shrimp in a grill basket or skillet. Grill over medium coals for 4-5 minutes or until shrimp turns pink, turning frequently. Place equal portions of the shrimp on each tortilla. Fold the bottom edge of the tortilla toward the center; fold the right and left sides over the top edge down. Serve with Salsa and quacamole
