Cheesy Yam Apple Bake
1/2 c. butter, melted
3 tbsp. onion, chopped
1/4 c. parsley, chopped
1/2 tsp. salt
dash of pepper
dash of ground thyme
6 sm. yams, peeled and sliced 1/4" thick
3 red apples, peeled, cored and cut into thin wedges
1 1/2 c. shredded cheddar cheese
Combine butter (melted), onions, parsley, salt, pepper and thyme. Arrange yams, butter mixture and apple slices in a shallow casserole. Cover and bake at 350 degrees for 60 minutes, until yams are tender. Sprinkle cheese around outside edge of casserole. Cover and bake for 10 minutes longer.
