Chocolate Velvet Cream Cake
1 1/2 c. crushed chocolate wafers
1/3 c. margarine (melted)
1 (8 ounce) pkg. cream cheese
1/2 c. sugar
1 tsp. vanilla
2 eggs (separated)
1 ( 6 ounce) bag semi-sweet chocolate morsels, melted
1 c. heavy whipping cream
3/4 c. nuts
Heat oven to 325 degrees. Combine crumbs and margarine. Press into a 9" square pan. Bake at 325 degrees for 10 minutes.
Combine cream cheese, 1/4 c. sugar and vanilla until well blended. Stir in beaten egg yolks and chocolate. Beat egg whites until soft peaks form, beat in 1/4 c. sugar. Fold into chocolate mixture. Fold also in, whipping cream and nuts. Pour over crumbs. Freeze. Garnish with shaved chocolate or whipped cream.
