Sweet Potato Fluff
3 c. cooked and mashed sweet potatoes
1 c. granulated sugar
2 large eggs
1/2 c. butter or margarine
1/2 tsp. vanilla extract
1 c. flaked coconut
1 c. brown sugar
1/3 c. flour
1 c. pecans (chopped)
1/3 c. butter/margarine
Directions:
Preheat oven to 350 degrees. Mix mashed sweet potatoes, sugar, eggs 1/2 c. butter, vanilla and coconut together.
Place in a 2 qt. casserole dish. With a fork, mix the brown sugar, flour, pecans and the remaining 1/3 c. buter together. Sprinkle over the sweet potato mixture.
Bake at 350 degrees for 30 minutes. This is a great dessert in the fall.
