Sunday Beef Pot Roast
1 beef pot roast (2 1/2 lbs)
salt and pepper to taste
3 potatoes, unpeeled and cubed
2 large carrots, sliced
1 lg. parsnip
2 celery stalks, cut into pieces
1 onion, sliced/diced
1 bay leave
1 tsp. rosemary
1/2 tsp. thyme
1/2 c. beef broth
Trim any excess fat from beef roast. Cut beef into serving size pieces, season with salt & pepper to taste. Place sliced potato, carrot, parsnip, celery, onion and bay leave into your slow cooker. Sprinkle rosemary and thyme over veggies. Arrange beef over veggies in your slow cooker, pour broth over beef. Cover. Coook on low for 8 1/2 hours or until beef is done.
