Carrot Cake
2 c. sugar
4 eggs
1 1/2 c. oil
2 c. flour
2 c. grated carrots
2 tsp. cinnamon
2 tsp. baking soda
1 tsp. salt
Cream eggs, sugar and oil until blended. Add grated carrots, cinnamon and baking soda, blend again. Add the flour last. Bake at 350 degrees for 30 minutes (maybe more time depending on your oven) or until done. Make sure baking pan is greased and floured well to prevent sticking. Cool completely before frosting.
Frosting:
1 stick of butter (not margarine)
1 box of 10X sugar
1 (8 ounce) pkg. cream cheese
1 tsp. vanilla
Cream butter, cream cheese, vanilla and 10X sugar together until nice and smooth. Remove the cake from the cake pan and frost your cake!
