Baked Pears with Cinnamon & Brown Sugar

4 ripe pears
2 tbsp. lemon juice
4 tbsp. sugar
1 tsp. cinnamon
2 oz. low-fat spread
low-fat custard, to serve
lemon peel, finely grated to garnish

Preheat the oven to 400 degrees F. Core and peel the pears, then slice them in half lengthwise and brush all over with the lemon juice to prevent the pears from discoloring. Place the pears, cored side down in a small roasting pan.

Place the sugar, cinnamon and low-fat spread in a small pan and heat gently, stirring until the sugar has melted and dissolved. Keep the heat low to stop too much water from evaporating from the spread as it gts hot. Spoon the mixture over the pears.

Bake for 20-25 minutes or until the pears are tender and golden, occasionally spooning the sugar mixture over the fruit during the baking/cooking time.

To serve: heat the custard until it is very hot and spoon over the bases of 4 warm dessert plates. Arrange 2 pear halves on each plate. Decorate with grated lemon peel and serve.
