Pineapple Cheese Ball

Pineapple Cheese Ball

3/4 c. shredded sharp cheddar cheese
1/2 c. chopped green pepper
2 tsp. grated onion
1 ( 8 ounce ) can crushed pineapple in juice, well drained
1/2 ( 8 ounce ) pkg. Neufchatel cheese, softened
1/2 ( 8 ounce) pkg. fat-free cream cheese, softened
2/3 c. chopped fresh parsley

Combine first 6 ingredients in a bowl. Cover and chill for 30-45 minutes.

Shape cheese mixture into a ball, roll in chopped parsley, coating the entire ball. Cover and chill. Serve with crackers, slices of rye bread or melba toast.
