Cod Creole
1 lb. cod filets, skinned
1 tbsp. lemon juice
2 tsp. olive oil
1 onion, finely chopped
1 green pepper, seeded and sliced
1/2 tsp. cayenne pepper
1/2 tsp. garlic salt
14 oz. can diced tomatoes
Cut the cod filets into bite-size pieces and sprinkle with lemon juice. Heat the oil in a large non-stick frying pan and fry the onion and pepper until softened. Add the cayenne pepper and garlic salt. Stir in the cod and the diced tomatoes. Bring to a boil, then cover and simmer over low heat for about 5-7 minutes or until the fish is done and flakes off easily.
Great served with rice or potatoes.
