Cauliflower Cheese Soup
1 large head of cauliflower
2 tbsp. onion, minced
2 tbsp. butter, melted
2 tbsp. flour
1/2 tsp. salt
1/4 tsp. pepper
1 can of beef or chicken broth
3 cup of milk
2 cup grated cheddar cheese
1/4 cup of parsley (optional)
Break cauliflower into small pieces. Cook uncovered in salt water until tender; drain. Meanwhile, saute the onion in butter until tender. Blend in flour, salt and pepper. Gradually stir in broth and milk. Cover and cook over medium heat, stirring constantly, until the mixture reaches a boiling point. Add cheese and stir until it melts. Add cauliflower and parsley. Heat to serving temperature. Makes about 2 quarts.
