Cranberry Applesauce
6 apples, cored and cut into chunks
1 cup raw cranberries
1/2 cup apple cider
1 cinnamon stick
2 Tbsp. brown sugar, firmly packed
pinch of ground nutmeg
Combine apples, cranberries, apple cider and cinnamon stick in a large heavy saucepan. Bring to a boil, reduce heat, cover and simmer for about 15 minutes, stirring frequently. Remove the cinnamon stick. Transfer the apple-cranberry mixture to a blender and puree. Add brown sugar and nutmeg to the puree and stir until well blended. Store in an airtight container in the refrigerator until ready to serve.
