Chicken, Veggie & Pasta Salad
2 can ready to serve chicken broth
1/2 c. mayonnaise
1/4 c. Parmesan Cheese, grated
1 tsp. crushed basil leaves
3 c. cooked macaroni
2 c. cooked chicken, cubed
1 c. cherry tomatoes, each cut in half
1 c. frozen peas
1/2 c. sliced mushrooms
1 onion, chopped
In a bowl, combine broth, mayonnaise, cheese and basil using a wire whisk. In a glass bowl, combine macaroni, chicken, tomatoes, peas, mushrooms, onion and broth mixture. Toss to coat. Cover; refrigerate until serving time for at least 6 hours.
