Snickerdoodle Bars

Snickerdoodle Bars

2 sticks of butter
1 c. brown sugar
1/2 c. granulated sugar
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. salt
2 large eggs
1 tsp. vanilla extract
2 1/4 c. flour
1 tsp. cinnamon-sugar to sprinkle on top

Preheat oven to 350 degrees. Use a 13x9" baking pan.

Cream butter and sugars together with an electric mixer at high speed until blended and fluffy. Add baking soda, cinnamon and salt, then mix at low speed to blend. Add eggs and vanilla extract and beat at medium speed until blended. Add flour and mix at low speed until all ingredients are blended together. Scrape dough into the baking pan, smoothing it into a even layer. Bake until lightly golden brown and set in the center, about 30 minutes. Transfer pan to a rack and if desired, sprinkle cinnamon-sugar mixture over the top or lightly dust the top with confectioners sugar. Once cooled, cut into bars.

not a problem!

This morning I made a Banana Pudding Cake. My aunt gave me the recipe this past weekend and since I am writing a cookbook, I just had to make it this morning. I am going to post the recipe...its delicous if I must say so myself!
